Are U Hungry 😋?

ABC Brickworks Mkt & Food Centre

It’s one of my favourite hawker food centre. It has tons of wonderful comfort food ranging from Fried Hokkien Mee, Wild Wild West western Food, Claypot rice, Nasi Lemak, Nasi Padang, Nanyang kopi etc.

One of my favourite stall : Fatty Cheong Roasted Meats, helmed by this fatty guy Mr Cheong, an ex-Arm buddy of my driving kakis... now, he had opened another stall selling Char Siew & Wonton Noodles (#01-52) next to the Nanyang Kopi stall. Father and younger son runs this stall now.

While His wife, together with of his another son’ helped to run this original stall (#01-120).

I ordered my all-timed favourite Roasted Char Siew with Rice @ S$5.00 and Dumplings 🥟 Soup @ S$3.50.

What’s so good 😊?

I have been a “regular” eating my comfort food : Roasted Char Siew w/ rice for the past 10 years...

I have a 1st hand opportunity to observe their cooking process one fine day ...

My favourite Char Siew has just cooled off from the oven wok... roasted to perfection. The meat was tenderized and juicy and a bit charred at the tail side of the Char Siew.

The highly caramelled (using malt) meat had gone through a tedious process of soaking into a deep bowl of red malt infused with his secret recipe and roasted inside the big giant charcoal burning wok (repeating the process of about 8 times)to retain the moisture inside the meat and layered caramel coating outside of the meat.

The boss had shared that they always insist that the shoulder meat joint of the pig are used for their Char Siews... that’s the reason why the meat has layered fats, soft and tenderly bite. Their cuts are unusually thick to ensure you bite and it shall mesmerized inside you.

Next, it’s Dumplings soup, comprises at least half a dozen of handmade dumplings made from wonton skin, fillings with Prawn, Marinated minced meat, added water chestnut for crunchiness, tasted amazingly great too !

Now, all his “ammunition” (business) has been concentrated into this amazing Hawker centre, as past experiences of expansion to other towns had made hefty losses and high rental deterrence had made good learning lessons for him.

The fatty boss, Mr Cheong had since transferred his technical know how of making The legendary of Roasted Char Siew/ Roasted Meat/ Roasted Duck to all his 3 sons. Recipe is exact replicate of the original stall. You may try their roasted Duck and roasted pork too !

Inarguably, you must savour this best Roasted Char Siew & it’s dumplings in town ...

As always ... Yummily 😋 Great!
