It’s been a long long time since I had a bite of this Rolina handmade, hand crafted chicken curry puff made by an Hainanese uncle.
As I slowly tear out the brown paper packet, revealing a small but bloated curry puff, akin to the Puffy fish 🐠 ...
A slow bite on its skin, further revealed thin crispy crust, going further bite : the spiciness of the chicken curry 🍛 flaming my taste bud, potatoes 🥔 cube get meshed up, a 1/12 size of sliced boiled egg 🥚, the spiciness and curry taste so prevalent and tastefully done ✅. 😯 🤩 ⭐️ 👍
Asked permission to take an insight of their kitchen as Uncle Tham cooks and stirring the big wok filled with curry paste, this key weapon : Rempah chillies 🌶 paste (Baba/ Nonya styled) made fresh daily, comprises of varieties of spices and labour intensive to wip a massive wok, to accommodate his daily puff making. Atypical Hainanese Chef 👨🍳 hard @ work on the spot. 😮 🤩 ⭐️ 👍
This stall focused with Curry puff dated back to 1976, when his Dad 1st started the business, now the 2G(Chef Tham) has taken over and his 3G, his daughter learning the trade via on the job training (OJT), looking amicably sweet and soft talking as she take orders from customers.
The stall also attempted to bring back old flavours of Kampong taste of : Glutinous Rice & Yam Cake. Give him a try !
The fillings truly packed the whole puff firmly and bloated with great flavours, in front of the stall: A 2018 Michelin recognition proudly displayed. This stall added into my library of Must Eat snack. 🤩 ⭐️ 👍
