Boiled Fish Fillet with Pickle in Hot & Sour Soup

Here are the ingredients that you will be needing!


【1】 small grass carp (about 700g),

【2】 250g pickled cabbage,

【3】 8 chopped pickled peppers,

【4】 25g fresh pepper


【1】 tablespoon (15g) minced ginger,

【2】 1 tablespoon (15g) chopped green onion,

【3】 1 egg white, 2 teaspoons (10g) white pepper,

【4】 1 teaspoon (5g) white sugar,

【5】 1 teaspoon (5g) salt,

【6】 1 tablespoon (15ml) oil ,

【7】 1 tablespoon (15ml) of high liquor,

【8】 3 bowls of stock (or water) (750ml)


【1】 Remove the gills and fins of the processed grass carp, chop off the fish head, and place the knife flat under the two large pieces of net meat.

【2】 Slightly cut the fish head and main fish bones and place them in the container. Then slice the clean fish into small slices and put them in a separate container.

【3】 Pour high liquor (to remove the smell) into the fish bones and fish fillets, soak for 5 minutes and rinse with water. Mix in egg white, salt, sugar and white pepper (1 teaspoon, 5g) by hand and marinate for 10 minutes.

【4】 Pickled sauerkraut, squeeze the water, and cut into 2cm wide sections.

【5】 Heat the oil in the wok over high heat (to 8 minutes hot), pour the pickled cabbage and stir fry for 2 minutes, add the stock (or water), add salt and ginger and boil for 6 minutes (this process can both The sourness is boiled into the soup, which can weaken the saltiness in the sauerkraut).

【6】 Put the tuned fish bones into a boiling pot and cook for 5 minutes to get a white soup. Then put the fish fillets flat in the boiling soup and cook for 1 minute. When it boils again, the pot will rise and put into the soup pot.

【7】 Take another wok and heat the oil to extremely hot. Pour in the chopped soaked pepper and stir fry until it is fragrant, pour it on the surface of the fish fillet soup, and finally garnish with chopped green onion and fresh pepper.
