【2】 After mixing 135 grams of low-gluten flour, 15 grams of high-gluten flour, and 20 grams of butter, add water to form a soft and smooth dough, then wrap it in plastic wrap and relax for 30 minutes.
【3】 Put 125 grams of butter in a fresh-keeping bag, beat and roll into thin slices.
【4】 Roll the loose dough into a rectangle with a pressing stick, about 3 times the size of butter.
【5】 Put the rolled butter in the middle, wrap the butter with a dough like a quilt and pinch the edges.
【6】 Gently tap the surface of the dough sheet with a rolling pin, and roll it again to a thickness of 0,5cm.
【7】 Fold the quilt for the first time, that is, fold the upper and lower sides in half, and then fold the two ends in half.
【8】 After folding into a quilt, wrap it with plastic wrap and put it in the refrigerator to relax for 20 minutes.
【9】 After taking out the dough, flatten it and roll it into a square dough.
【10】 Fold the quilt a second time, then wrap it in plastic wrap and let it rest in the refrigerator for 20 minutes.
【11】 Cut pork belly and pork loin into diced pork at a ratio of 1:1, add 2 spoons of oyster sauce and 1 spoon of light soy sauce.
【12】 Heat a little oil in the pot, add the BBQ pork, stir fry evenly, add water and simmer until the BBQ is soft
【13】 The water is basically dried, add a little cornstarch water to thicken it.
【14】 Take out the noodles, roll them into thin slices, and add the BBQ filling after pressing.
【15】 Fold in half and press lightly with a fork to seal.
【16】 Preheat the oven to 250 degrees, the lower and middle layer, and bake for 10 minutes.
