Baked fish with assorted vegetable in chili & pepper sauce

【1】Wash the fresh grass carp that has been slaughtered, cut off the fins, use a knife to bloom on both sides of the fish body, and then divide the fish part along the fish bone, so that the fish is divided into two halves, and the back of the fish is connected (in the previous steps, in When buying fish, you can let the store handle it for you.) Spread the fish body with green onions, ginger slices, 1 spoon (5ml) of cooking wine and 1 teaspoon (5g) of salt, and marinate for 20 minutes.

【2】Put the marinated fish in a baking tray lined with tin foil, put onion and ginger slices, brush the fish with oil and soy sauce, sprinkle with chili noodles, pepper noodles, and cumin powder, and put them in the preheated 230 degrees Bake up and down in the oven for 20 minutes (you can take it out in the middle and brush it with soy sauce and oil again).

【3】Cut the ginger and minced ginger, cut the garlic into large pieces, remove the old leaves of celery, wash and cut into sections, peel and cut the green bamboo shoots and lotus root slices into thick slices, wash the shiitake mushrooms, and cut the tofu skin into wide strips.

【4】Put oil in the wok, heat to 50% heat, add minced ginger and garlic cloves and sauté until fragrant, add chili sauce, and Chinese pepper to fragrant.

【8】Put the grilled fish with side dishes into the oven ~200 degrees and bake for 5~10 minutes.
